"Olive oil from Haute-Provence AOP" is one of the seven Protected Designations of Origin in France, according to European legislation for olive oils (Nyons AOP, Vallée des Baux de Provence AOP, Aix en Provence AOP, Haute -Provence AOP, Nice AOP, Corse AOP and Nîmes AOP).

Aglandau, the dominant variety in this region, is particularly sensitive to the terroir. At altitude on clay-limestone soils like Les Mées, its taste is powerful. It is characterized by a nose of freshly cut grass, raw artichoke or tomato leaf.
