Banon cheese vine leaf
Banon cheese has long been hidden behind a vine leaf. As the phylloxera epidemic cut short this supply, it has set its sights on chestnut leaves. These leaves are collected in autumn from the trees so that they are neither too dry nor too wet, ideally between 11am and 14pm! No improvisation!
